Medium-hot. We use the aromatic pahadi red chilli (not Kashmiri or bhut jolokia) - balanced heat with strong tangy flavour from the stuffing. Eat 1 chilli per meal as a side.
What's the stuffing made of?
Toasted yellow mustard seeds, fennel, fenugreek, ajwain, nigella, turmeric, asafoetida (hing), and rock salt - ground coarse and mixed with raw cold-press mustard oil. Traditional Garhwali masala combo.
How do I serve it?
Slice one stuffed chilli over dal-chawal, paratha, theplas, or curd-rice. Add a spoon of the spiced oil over plain rice. Pairs beautifully with breakfast eggs and aloo paratha.
Does it contain vinegar or preservatives?
