The bees behind wild forest honey
Two wild giants make almost all of India's forest honey. The first is Apis dorsata, the giant rock bee, found across India's sub-mountainous forests up to roughly 2,000 metres. It builds a single, massive open comb — commonly reported up to about 1.5 metres across — suspended from a high branch, a cliff overhang or even a water tower, often clustered with dozens of other colonies in one aggregation. The second is Apis laboriosa, the Himalayan giant honey bee, the largest honey bee in the world, which nests even higher on exposed cliff faces and copes with freezing nights and thin mountain air.
Neither of these bees is domesticated. Unlike the native hive bee Apis cerana indica or the introduced European Apis mellifera — both of which will happily live in a beekeeper's box — the giant bees build in the open and migrate. Apis dorsata colonies can travel long distances (studies report seasonal movements on the order of tens of kilometres, sometimes cited up to around 100 km) as forage shifts with the seasons, abandoning old combs and building fresh ones near the next bloom. You cannot fence that in. Wild forest honey has to be found and reached — it cannot be farmed.
Why wild forest honey can't come from a box
Because the giant bees nest in the open and move with the flowers, the only way to gather their honey is to go to the comb — often a long way up. In India this is old, skilled work. Tribal honey-hunter communities in the Nilgiri Biosphere Reserve — the Kurumbas, Kattunayakans, Sholigas and Irulas — have harvested wild Apis dorsata combs from forest cliffs and tall trees for generations, and honey hunters work the mangrove forests of the Sundarbans and the hills of the Garhwal Himalaya in Uttarakhand.
The most iconic version of the craft belongs to the Gurung honey hunters of central Nepal, who scale Himalayan cliffs up to around 100 metres high to reach Apis laboriosa combs. Teams anchor a handmade rope-and-bamboo ladder above the colony and lower it down the rock face; one hunter descends toward the comb while the rest manage the ropes from above. Below, smouldering green vegetation sends up cool smoke that quiets the bees and coaxes them off the comb, and the hunter cuts the honey-laden section into a basket lowered on a rope. It is dangerous, deliberate work — and it is entirely unlike lifting a frame out of a garden hive.
The forest, not a farmer, makes the flavour
What sets wild forest honey apart is forage. A managed hive in a mustard field produces mustard honey; the crop decides the taste. A wild forest colony forages whatever the surrounding forest happens to be flowering — dozens of tree, shrub and wildflower species across a season — so the honey is genuinely multifloral. Pollen studies of rock-bee honey from the Garhwal Himalaya have traced its nectar back to a wide spread of wild plant families, which is exactly why a true forest honey shifts in colour and flavour from batch to batch and place to place.
This is also why uniformity is a warning sign, not a quality mark. Wild forest honey that tastes identical jar after jar, year-round, has usually been blended or standardised. Sustainable harvest vs destroying the hive
Here is the part that decides whether wild honey is worth buying. The giant bees are wild pollinators, and how their combs are harvested determines whether the colony survives. A sustainable harvest takes only the honey and leaves the rest. Nilgiri honey-hunter tradition, documented by the Keystone Foundation, is a clear model: if hunters find seven combs they may take only three, and even then they cut out only the honey-storing crown of the comb, leaving the brood — the eggs and larvae — untouched so the colony can rebuild. Hives are marked so others do not re-harvest the same colony, and enough honey is left for the bees to get through lean weeks.
The destructive alternative is to bring down or burn the whole comb to strip every drop at once. Setting fire directly to a comb, or crushing brood and adult bees to squeeze out honey, kills the colony and the next generation with it. It also yields dirty, sometimes fermenting honey mixed with crushed brood. As forest cover shrinks and giant-bee numbers come under pressure, the difference between these two approaches is no longer just an ethics question — it is what decides whether there is any wild honey to harvest next year at all. A word on "mad honey"
One kind of wild Himalayan honey deserves a clear caveat. When Apis laboriosa forages high-altitude rhododendron species (chiefly Rhododendron arboreum and R. campanulatum above roughly 3,000 metres), the nectar carries natural compounds called grayanotoxins, and the resulting reddish honey — known as "mad honey" — is mildly psychoactive and, in more than tiny amounts, genuinely toxic. It is a real traditional product in parts of Nepal and Turkey, used ceremonially and medicinally, but grayanotoxin poisoning is a documented medical condition.
To be completely clear: everyday wild forest honey — including ours — is not mad honey. Forest honey from mixed lowland and mid-hill bloom does not carry a meaningful grayanotoxin load. Mad honey is a specific, rare, high-altitude rhododendron product; ordinary Himalayan wild forest honey is a safe, food-grade multifloral honey. If a seller markets standard forest honey as psychoactive, treat that as a red flag.
