How Raw Honey Is Made in India: From Beehive to Jar hero image

You unscrew a jar of raw honey, and it looks simple — thick, golden, a little cloudy. But between a flower in a Himalayan forest and the spoon in your kitchen there are roughly nine distinct steps, most of them done by bees and only a few by people. Understanding that journey is the single best way to judge whether the honey you are buying is the real thing, because almost every shortcut that produces cheap, lifeless honey happens at a specific, nameable stage.

This is not a piece about the chemistry of how bees turn nectar into honey (we cover that in How Bees Make Honey), nor about spotting a fake once it is in the jar (that is How to Test Pure Honey). This is the supply chain — the honest, physical walkthrough of how raw honey is actually made in India, from beehive to jar, with a look at exactly where our own Uttarakhand honey fits into it.

The short version: Bees forage nectar, ripen it into honey and seal it with wax. A beekeeper harvests only the sealed frames, spins the honey out cold in a centrifuge, strains it lightly, lets it settle, and jars it. "Raw" means it was never heated past hive temperature and never micro-filtered — so the pollen, enzymes and aroma survive the trip. The cheap stuff cuts corners at extraction and processing.

Step 1: Foraging — it begins with a flower

Every drop of honey starts as flower nectar. In India the two workhorse bees are the native Apis cerana indica — a smaller, hardy cavity-nester perfectly suited to hill and forest conditions — and the introduced Apis mellifera, the larger European bee that most commercial apiaries now keep for its higher yields. A single foraging bee visits hundreds of flowers a day, drawing up nectar into a special "honey stomach" and carrying it back to the colony.

What the bees can reach decides everything about the final flavour. In Uttarakhand, where forest cover runs to roughly 45% of the state, colonies forage across wild multifloral bloom — and pollen studies of Himalayan honey have traced nectar sources to plant families numbering in the dozens. This is why a genuinely wild forest honey tastes of a place and a season, and why it changes batch to batch. Uniform, identical honey year-round is a warning sign, not a quality mark.

Step 2: Nectar becomes honey inside the hive

Raw nectar is thin and roughly 70–80% water — it is not honey yet. Back at the hive, forager bees pass it to house bees, who add enzymes (chiefly invertase, which splits the nectar's sucrose into glucose and fructose) and spread the droplets in thin films across the honeycomb. Then the colony fans its wings in a collective draught, driving the water off over one to three days. This is the real work of honey-making, and it is entirely the bees'. No beekeeper speeds it up; a good one simply stays out of the way until it is finished.

Step 3: Capping — the bees' seal of "done"

How do the bees know the honey is ready? Moisture. When a cell of honey drops to roughly 17–18% water content, it is dense enough that yeasts and microbes cannot grow in it — naturally shelf-stable — and the bees seal that cell with a fresh cap of white beeswax. That wax cap is the colony's own quality certificate. Experienced beekeepers wait until about 80–90% of the cells on a frame are capped before they harvest; pulling honey early, from uncapped cells, means water content above the safe threshold and honey that can ferment. Rushing this step is the first place cheap honey goes wrong.

Step 4: Harvest — opening the hive

Harvest is a calm, deliberate job, usually at the end of a flowering season. The beekeeper puffs a little cool smoke at the entrance, which nudges the bees to move down and off the honey frames, then lifts out only the frames that are properly capped — leaving the brood nest and enough stores for the colony itself. A responsible harvest never strips a hive bare. The bees that fed you also have to get through the next lean stretch, which is exactly why ethical sourcing and honey quality tend to travel together. Step 5: Cold extraction — spun out, not squeezed or heated

This is the step that most decides whether honey ends up "raw" or not. In cold extraction, the beekeeper slices the thin wax cappings off the comb and places the frames in a centrifugal honey extractor — a drum that spins the frames so that honey is flung out by centrifugal force, at ambient hive temperature, with no heat applied. The empty comb stays intact and can go straight back to the bees to be refilled.

The industrial alternative is to warm the honey to make it thinner and flow faster through machinery. The problem is that honey's living fraction is heat-sensitive: its enzymes start to degrade from around 35°C, and heating produces a compound called HMF (hydroxymethylfurfural) whose formation rate roughly doubles for every 10°C rise. Beekeepers and food scientists broadly advise keeping honey below about 40°C. Genuine raw honey never sees those temperatures — which is precisely why it keeps its enzymes, its aroma and its natural cloudiness.

Step 6: Straining and settling — not micro-filtering

Freshly extracted honey carries bits of wax and the odd air bubble, so it is passed through a coarse strainer — a mesh or cloth — then left to settle in a tank for a day or two so trapped air and fine wax rise to the top and are skimmed off. That is the whole of it for raw honey.

Here is the crucial distinction. Straining removes wax and debris while leaving the pollen, which is what carries the honey's floral fingerprint and lets a lab verify where it came from. Ultra-filtration — forcing honey under pressure and heat through microscopic filters — strips the pollen out entirely. That is a red flag, because removing pollen also removes the evidence of origin, and it is a technique associated with laundering cheap or adulterated honey. Raw honey should look slightly hazy and may crystallise over time; both are signs it was left alone, not defects.

Step 7: Jarring and the lab test

The settled honey is gently poured into jars — ideally in small batches, so a jar can be traced back to the beekeeper and the bloom it came from. But a responsible producer does not stop at the cap. Before honey reaches you it should clear a few checks: moisture (below ~20%, ideally ~18%), HMF (low, confirming it was never overheated or stored badly), and increasingly an NMR profile — nuclear magnetic resonance testing that fingerprints the sugars and can detect added rice or sugar syrup.

This matters more in India than almost anywhere. In a 2020 investigation, the Centre for Science and Environment (CSE) sent samples of leading Indian honey brands for NMR testing at a specialised German lab: only three of thirteen brands passed, with several household names failing for modified sugar syrup. NMR is mandatory for Indian honey meant for export but is still not part of the FSSAI standard for honey sold domestically — which means, for now, the test is only as reliable as the producer choosing to run it. Frequently asked questions

What does "raw honey" actually mean?

Raw honey is honey that has been extracted from the comb and lightly strained, but never heated past hive temperature (roughly 35–40°C) and never ultra-filtered. That gentle handling is what preserves its natural enzymes, pollen, aroma and tendency to crystallise. If honey has been pasteurised or micro-filtered to look permanently clear, it is no longer raw.

How is honey extracted without heat?

By spinning. The beekeeper uncaps the wax seals and places the frames in a centrifugal extractor, which flings the honey out of the comb using centrifugal force at ambient temperature. No warming is needed. Heating is only used in industrial processing to make honey flow faster through machinery — and that is exactly the step that damages raw honey's living qualities.

Why is my raw honey cloudy or crystallised?

Because it still contains pollen and natural glucose, and it was never micro-filtered or heated to suppress those. Cloudiness and crystallisation are normal, reversible signs of genuine raw honey — not spoilage. Perfectly clear, syrup-smooth honey that never sets has usually been heavily processed.

Which bees make honey in India?

Commercially, mostly two: the native Indian hive bee Apis cerana indica, well suited to hill and forest apiaries, and the introduced European bee Apis mellifera, kept widely for higher yields. Is heated or processed honey bad for you?

It is not unsafe, but heating and ultra-filtration strip out much of what makes raw honey worth choosing: enzymes, pollen and aroma, while raising HMF. You still get the sugars, but you lose the character and most of the reason to pay more for "raw". For everyday flavour and the natural benefits, cold-extracted raw honey is the better buy.
