The other might be blended in a factory from the output of thousands of colonies trucked across the country, fed sugar in the lean months and dosed against disease. Neither jar tells you which it is — so this guide does.

This is an honest, side-by-side look at ethical, small-scale apiculture versus industrial, commercial beekeeping as they are actually practised in India and worldwide. It is not a hit piece. Industrial beekeeping feeds a genuine need — it pollinates a large share of the food we eat and puts affordable honey in millions of homes. But its methods carry real costs to bees, and those costs are worth understanding before you choose a jar. Where a practice is a documented trade-off rather than a villainy, we say so.

Two philosophies, one insect

The difference is not really about hive design or region. It is about what the operation optimises for. Ethical apiculture optimises for colony health and continuity and treats honey as a shared surplus. Industrial apiculture optimises for yield, pollination output and throughput, and treats the colony as a production unit to be kept alive and productive as efficiently as possible. Almost every practical difference — how bees are fed, moved, medicated and bred — flows from that one divergence in priority. What industrial beekeeping actually involves

The commercial model is built to move a lot of bees and produce a lot of honey. Here is what that looks like in practice, and why each piece exists.

The defining feature of large-scale commercial beekeeping is that the bees travel. The starkest example is California's almond bloom — the single largest pollination event on earth, requiring over 1.5 million honey bee colonies, so that in a typical year more than 60% of all commercially managed colonies in the United States (out of roughly 2.5 million) are trucked into a single valley to pollinate one crop. India has its own version: intensive migratory beekeeping follows the rubber estates of the south, and colonies are routinely moved to crop fields during flowering under paid pollination contracts, a legitimate and valuable service to farmers.

The trade-off is stress. Research on migratory colonies finds that transport impairs the bees' immunity and promotes elevated virus replication, and that migratory adult bees have measurably shorter lifespans than stationary ones. Parking hives on a single blooming monoculture compounds it: the almond bloom, for instance, offers plentiful nectar but limited pollen diversity, which can leave bees nutritionally deficient and more vulnerable to disease. Crowding colonies from across a continent into one place also makes it an efficient exchange point for pests and pathogens.

When a hive's honey is harvested for sale, something has to replace it as the colony's food — and in commercial operations that something is usually sugar syrup. In the Indian context, the tendency of the native Apis cerana to abscond during the lean season is commonly managed by supplying excessive sugar feed through the entire dearth period. Feeding sugar is not inherently cruel — it keeps colonies alive when forage fails. But routine, heavy sugar feeding substitutes a single simple carbohydrate for the complex nutrition of real honey and varied pollen, and a colony living on syrup is more poorly nourished than one eating its own stores.

Antibiotics and chemical treatment

Dense apiaries are disease-prone, and the commercial answer is often chemical. Beyond the miticides used almost everywhere against the Varroa mite, North American beekeeping makes prophylactic use of antibiotics — principally oxytetracycline — to head off bacterial brood diseases such as American and European foulbrood. This has consequences: sustained antibiotic pressure has driven oxytetracycline-resistant strains of the foulbrood bacterium in commercial operations, a textbook antimicrobial-resistance problem. Notably, the European Union prohibits prophylactic antibiotic use in beekeeping altogether, and antibiotic residue is a recurring hurdle for Indian honey exports. Ethical beekeeping treats chemicals as a last resort; industrial beekeeping, running colonies at densities nature never intended, often cannot.

Intensive queen management

In a small ethical operation the queen mostly runs her own affairs. Commercial beekeeping manages her tightly, because a failing queen means a failing production unit. Queens are mass-reared by grafting and colonies are requeened on a schedule to keep laying vigorous. To suppress swarming — which costs bees and honey — some beekeepers clip a queen's wing. And to lock in selected traits, breeder queens are produced by instrumental (artificial) insemination, a precise laboratory technique that has become a standard tool of professional bee breeding. These are real, documented practices, not fringe ones; whether they trouble you is a judgement call, but they mark a clear line between managing bees and letting bees be bees.

Finally, the honey itself is handled differently. To deliver a uniform product at scale, commercial honey is typically blended from many colonies and often many regions, then filtered and frequently heated (pasteurised) so it stays clear and pourable on the shelf. That processing trades away much of what makes raw honey distinctive — the pollen, enzymes, aroma and place-specific character — for consistency and shelf life. The blending endgame: adulteration

Blending is where the industrial honey chain is most exposed — and this is a problem of packers and processors, not of beekeepers. Once honey is a commodity to be mixed and standardised, cheap sugar syrup can be mixed in too. India's most sobering evidence came from a 2020 Centre for Science and Environment (CSE) investigation, which sent leading branded honey for the internationally accepted Nuclear Magnetic Resonance (NMR) test: 77% of samples were found adulterated with sugar syrup, and only 3 of 13 brands passed. Worse, the syrups involved — some engineered specifically to slip past standard tests — meant a jar could be 50–80% syrup and still clear India's stipulated checks. None of this is a failure of the bees or the honest beekeeper; it is a failure that lives in the anonymous, blended middle of the supply chain, which is exactly the part that traceable single-origin honey avoids.

What ethical, small-scale beekeeping looks like

Against all of that, the ethical alternative is almost boringly simple. A modest number of hives stay in one place. The bees are usually native stock suited to the local climate, so they largely look after themselves. They forage diverse wild and orchard bloom rather than a single sprayed crop. The beekeeper leaves them enough of their own honey to overwinter and harvests only the surplus, so there is little need for sugar feeding. Chemical treatment is minimal. The queen is mostly left to her own cycles. The honey that results is raw, unblended and traceable to a season and a place. In fairness: industrial beekeeping is not the villain

It would be dishonest to end there. Commercial, migratory beekeeping exists because the world needs what it does. Pollination-dependent agriculture — almonds, apples, and dozens of fruit and vegetable crops — simply could not function without managed colonies delivered where and when the bloom needs them, and that service supports a huge share of the food supply. Scale also makes honey affordable and available to millions who would never pay hill-honey prices. In India, the sector is a deliberate development engine: the National Beekeeping and Honey Mission, backed by a ₹500 crore allocation, helped push national honey output to roughly 1.4 lakh tonnes in 2024 and around 1.07 lakh tonnes of exports, worth about $177 million, while aiming to generate lakhs of rural jobs. Many commercial beekeepers are careful, skilled and genuinely bee-conscious; "industrial" is a description of scale and method, not of morals. The honest position is not that big beekeeping is evil and small beekeeping is holy — it is that scale imposes stresses and shortcuts that small, local beekeeping can avoid, and that the two produce quite different honey.

What it means for the jar you buy

You cannot audit the hive, so you read the signals. Honey that is raw, single-origin and from a named region and bee is very likely small-scale and ethically produced. Anonymous blended, multi-floral honey from no stated place sits at the industrial end of the spectrum — not necessarily adulterated, but from the part of the chain where adulteration hides.
